Pinto Bean Salsa Delight

This is a delicious treat that is very healthy. Try it and enjoy!
INGREDIENTS:
1 can pinto beans drained and rinsed
1 can black eyed peas drained and rinsed
1 can corn drained (shoepeg – white corn)
1 cup yellow pepper chopped
1 cup of celery chopped
1 cup of green onion chopped
1 jar of pimento chopped
1 small can of jalapeno peppers chopped
1/2 cup Splenda
1 teaspoon regular (not virgin or extra virgin) olive oil
INSTRUCTIONS:
Prepare first set of ingredients as listed in a large bowl.
Mix ½ cup of cider vinegar, ½ cup of splenda, 1 teaspoon olive oil, ½ cup water
heat it in saucepan, bring to a boil, turn it off, pour it on mixture of ingredients.
Refrigerate overnight
Serve with Baked Tostitos for a wonderful snack. Bon Appetit!
