Quinoa with roasted peanuts & cilantro

Quinoa with Dry Roasted Peanuts & Cilantro

Makes 7 servings of 1/2 cup each

Ingredients:
1 C Quinoa
1 C dry roasted peanut powder-coarsely ground
13/4 C water
1 tsp salt
1 tsp extra virgin olive oil
1/2 tsp cumin powder
1/2 C cilantro-finely chopped (optional if you really hate cilantro)

  • wash  quinoa couple of times,drain completely. Add water and cook in a 1quart pot on high heat.
  • when the water starts boiling reduce the heat to low, cover and cook till the ring forms around the grain and grain becomes translucent and soft.
  • remove from heat and let it sit for 5-10 minutes.
  • remove the lid, fluff it with the fork
  • add above ingredients and serve, warm or hot.

Indian Style:

Use 1 tsp of canola oil instead of olive oil
Use 3/4 tsp of whole cumin instead of 1/2 tsp cumin powder
add 2-4 hot green chilies cut into small pieces

Heat oil in 2 quart pot on medium heat
When oil is hot, add chilies and cumin
When cumin turns golden brown, remove from heat
*if oil is heated too much, cumin will turn dark brown so watch carefully then add follow the rest of the recipe
* serve with nonfat or lowfat yogurt and enjoy!

Makes 7 servings of 1/2 cup each
